Climb is the sum of all ascents/descents in elevations during an activity.
Here's an example: If you climb 500 feet then descend 600 feet, then climb 301 feet, the total Climb is 1401 feet.
Elevation is a net calculation for total ascents and descents throughout an activity.
In the example below, you will see the sum of the net elevations from each split is 15. This represents the net change in elevation throughout the entire activity.
